Pork Tenderloin Sandwiches with Red Cabbage Coleslaw and Sriracha

If you have a BJ's Wholesale Club near you...run out and buy their bag of small crusty rolls from their Artisan Bread Collection (preservative and cholesterol free) and make these sandwiches today! (I do not get paid to promote BJ's, but I am a long time member of the store and these rolls are a staple in our home! They freeze well and when heated in the oven, turn into the perfect crusty roll for dinner rolls, garlic bread or sandwiches!) 

If you do not live near a BJ's, simply make sure you pick-up some delicious rolls, crusty on the outside and soft and chewy in the center!  I like to warm the rolls first too...just to give them that extra bite...plus who doesn't love the smell of bread warming in the oven! 

Like I mention in my attached post on SheKnows...these Pork tenderloin sandwiches with red cabbage coleslaw and Sriracha (click on the link for the recipe) are addicting!

Serve them warm, room temperature or cool and be sure to make a lot! They will fly off the tray at your next tailgate or game day party! I promise if you like all the ingredients in this sandwich  - you will love these! Enjoy!

An affordable alternative to jumbo lump crab cakes, these appetizer sized Fish Cakes made with 1.5 lbs of fresh Cod are a fun and delicious treat for dinner or a party!

Serve with your favorite sauce such as cocktail, tarter or a lemony mayonnaise.

Thin Crust Shrimp Scampi Pizza ~ If you're a Trader Joe's fan, you'll LOVE this one!

At first glance this pizza may look dry to you, but trust me when I say it's anything but!  It's light, crispy, fun, and POSITIVELY delicious!!!   Keep costs down by replacing the shrimp with sauteed broccoli and garlic...or leave the toppings off all together and simply go with cheese! 

Now...here's where some of you will like me and some of you will not.  My Super Thin Crust Shrimp Scampi Pizza was made almost entirely with ingredients I picked up at Trader Joe's.

If you're one of the, "unfortunates" (with no Trader Joe's), the pizza can obviously be made by gathering the ingredients elsewhere...or go crazy and make it entirely from scratch.

Grilled Vegetable Sandwich Smothered with Hot Melted Cheese on a Crusty Roll

Here is a simple, mouth watering vegetarian sandwich I first made 15 years ago, while working in an Italian Restaurant and Pizza place down at the Jersey Shore.  

While back in the kitchen prepping for dinner service, my boss Jason asked me to make him a sandwich.

"What kind?" I asked.

Jason replied, "make me anything,  just no meat and not one that appears on our menu...."

Grilled Cheese with Roast Beef and Sweet Red Caramelized Onions ~ Sandwich Love.

I'm all about the food porn now a days. Sorry...I can't help it.  Seriously, I started caramelizing onions today...just because??  No reason.

I guess I figured some inspiration would emerge from the sound of the onions soaking and sizzling in hot, bubbling butter....

Some inspiration would emerge from the aroma of the onions rendering down in their sweet earthy goodness....

Well, this Grilled Cheese Sandwich is what resulted.  After its photo shoot...

Let me start by saying these Buffalo Ranch Chicken Cheese Bites with Crispy Bacon would make delicious sliders!  Just add a small soft toasted bun, thinly sliced red onion, a piece of lettuce and a side of chips and...well...need I say more??????

I made my Cheesy Mexican Rice and Black Beans last night to accompany grilled Mexican spiced pork chops with a side salad of mache greens, avocado, cilantro and scallion.  The recipe yields a ton (especially when served as a side dish)...so with the leftovers, tonight's dinner will be Chicken Burritos with (you guessed it) Cheesy Mexican Rice and Black Beans!

Potato Leek Soup

Fine. So she won't win any beauty pageants, but she sure is nice and comforting...like a Snuggie.

(No, I don't own a Snuggie...and no, there isn't a photo of me out there wearing an electric blue one sitting by a roaring fire, sipping red wine...)  (I dread the day that thing finds me on facebook...)
 
I took well over a hundred pictures of this soup. 

It started out in a white bowl, then a yellow bowl, then tea cups.  It went outside, back inside, on the floor and at one point was even precariously positioned on the edge of the living room window (...a little potato soup smudge on your silk Pottery Barn drapes adds character right?)

Simple Bar-B-Que Chicken Cheese Sliders

It's a busy time of year, so we're making a concerted effort to come up with some SIMPLE, DELICIOUS, FUN and AFFORDABLE meals the whole family can enjoy! 

In our house, my husband and I top these Bar-B-Que Chicken Cheese Sliders with just a touch of lettuce and red onion.  The kids love them topped with thinly sliced apples...
