Shrimp cakes with lemon mayonnaise

These mini shrimp cakes with lemon mayonnaise are perfect for a party! I've made and even posted these before... but made some tweaks to the recipe and posted to SheKnows. 

The lemon mayonnaise is wonderful, but so many delicious sauces come to mind...a classic cocktail or tarter, a sweet Asian chili sauce or spicy chipotle mayo!!!

Grilled oysters with garlic herb butter

Another photo project for SheKnows... so I can't take credit for this recipe, but I can say I made it as written and then took its picture ~ which was hard ~ because once you have one of these little guys ~ you simply want to devour the whole darn tray!

Such a delicious and fun way to serve and eat oysters...I like placing them on a bed of sea salt as shown here. What's nice about grilling oysters too, is that the heat makes their tops pop open ~ so no difficult shucking! SCORE ONE FOR EASE!!!!

I've made these before...but I wanted to make them again and rephotograph...

These Cobb Salad Endive Boats are addicting little bites that should be served along side your favorite dressing. Perfect for Mother's Day brunch or any garden chic party...find endive that's medium sized so you're able to fit in all of that goodness!

Mushroom Bruschetta on Cheese Toasts

I posted a mushroom bruschetta a while back. This one is similar...but even easier!  It's a good one to have on hand as it can be eaten at room temperature....is affordable and delicious! I made this recently for this post and ended up using the leftover mushroom bruschetta in a cheese and mushroom quiche ~ equally good!

That's if you like mushrooms. I know there are people out there who can't stand their taste or texture.  Like cilantro, mushrooms can be polarizing...divide a room...start rumbles. 

Now I'm picturing a mushroom rumble and it's not pretty...I hope I never get into a mushroom rumble...and that's all I have to say about that.

Grilled Sardines with Lemon and Herbs ~ Beauty is in the Eye of the Beholder

Fresh sardines.  I think they're beautiful to look at, but then again, I've always had an affinity to fish.

I love the coast.  I love seafood.  Some of my fondest memories are of sitting around the table with my mom, dad, sisters and brother...slurping down clams and feasting on freshly caught flounder.  So when I came across fresh glistening sardines at Whole Foods this weekend (an item they don't always carry) I knew I had to bring a few home.

Just thaw (they thaw quickly) and get stuffing!

Let me start by saying these Buffalo Ranch Chicken Cheese Bites with Crispy Bacon would make delicious sliders!  Just add a small soft toasted bun, thinly sliced red onion, a piece of lettuce and a side of chips and...well...need I say more??????

Shown here, as simple bites, they are a breeze to prepare and make for perfect toothpick/napkin food!

Tuna Ceviche with Cilantro-Lime Vinaigrette and Baby Arugula

Here's a simple and equally pretty salad or appetizer to serve at your next party. Just be sure your guests like cilantro...if not...I would think a suitable substitute would be a combination of fresh basil and parsley!

*To make your tuna easier to cube, place the tuna steaks in the freezer for about 15-20 minutes before slicing, this ensures it's nice and cold too!

1.) Make this Cilantro-Lime Vinaigrette exactly as written below.  At the end, stir in one tablespoon of very finely diced scallion. (The scallion is optional but I enjoy a little scallion crunch with my tuna ceviche.)

2.) Dice up super fresh Ahi Tuna and place in a bowl.

3.) Spoon some of the prepared vinaigrette onto the tuna and mix together.

4.) Spoon some Cilantro-Lime Vinaigrette on the bottom of a plate.

5.) Place a circle cookie cutter (or food shaper) centered on top of the vinaigrette.

6.) Spoon tuna ceviche into the circle and lightly pack it down.

7.) Remove the circle, top with a bit of baby arugula and drizzle with a tad more vinaigrette.

Ingredients:

1 cup packed cilantro
1/2 cup extra-virgin olive oil
1/4 cup lime juice
1/4 cup orange juice
1/2 teaspoon salt
1/2 teaspoon pepper
Pinch of minced garlic

Place all ingredients in a food processor and blend until smooth vinaigrette consistency.
