Bacon Wrapped Cheese Stuffed Dates ~ Little Bites of Heaven!
Bacon Wrapped Cheese Stuffed Dates are a, "must have" hors d'oeuvre at your next wine and cheese or holiday gathering...
Fellow food blogger, Nicole Criss at And Baby Cakes Three (a MUST SEE and READ blog) gave me the idea to make these treats a few months back. (I needed an idea for a party and these babies were the first to go!!!)
Be sure to allow your Bacon Wrapped Cheese Stuffed Dates to sit a few minutes after they emerge from the oven ~ as you want the cheese inside to, "set and cool" just a bit before completely indulging! They're like little bites of heaven!
1. Mix together a combination of room temperature 8 oz. Cream Cheese to 4-5 oz. Goat Cheese.
2. Open 24 pitted dates by slitting vertically (not cutting through) with a paring knife...some dates are already open like this, some will need cutting. *TIP: when buying your pitted dates in a bag, be sure to squeeze the bag a bit to make sure the dates inside are pretty soft - if they feel too firm and dry, try to find another bag or brand...
3. Stuff your opened dates with the cheese mixture...
4. Wrap each stuffed date with half a bacon slice and place bacon seam side down in a roasting pan. (approx. 1 lb bacon.)
5. Bake in a preheated 350 degree oven for 20-25 minutes or....
...until the bacon is cooked and crispy! ...Oh and by the way...perfect party bite to make a day in advance and reheat!!!

I make these every year for Christmas Eve. I stuff with almonds instead of cheese. Looks like this year we are going to change it up a little.
@Toni - I've heard of stuffing the dates with a combo of cheese and smoked almonds! I'll try that next! :)

I've made variations of these and love them (prunes and bacon for example) but have never tried these in particular. I will, I promise.

Yes, they look like little bites of heaven to me. Of course, you could wrap just about anything in bacon and it would be heaven to me, but these look especially good!
