Grilled Mini Sweet Peppers stuffed with Cream Cheese & Goat Cheese ~ East Coast Earthquake 2011
Just returned home from a trip to Ohio and now busy preparing for back to school and a weekend party where I'm responsible for all of the appetizers! There will be about 30 guests and at least one of the app's will involve some sort of seafood...so stay tuned for posts to come!!!
In the meantime, here's what I was making during the east coast EARTHQUAKE 2011...Magnitude 5.9!?
Dip them in a Ranch Sauce and they're sure to, "Rock your World!" (sorry)
I used an egg carton to form my aluminum foil so that the mini peppers would stay upright while grilling on the grill....
Before grilling, cut off the tops of the peppers, stuff the peppers with a 50/50 ratio of cream cheese and goat cheese, then top the peppers with the stem from one of a different color...
Grill on a gas grill Medium-High approximately 20 minutes...
Carefully remove from grill and allow to cool slightly - perfect at room temperature!
Beautiful and Delicious.... enjoy!

What an ingenious idea with the egg carton. how did that not burn?! they are very pretty and i'm sure the cheese is decadent! totally earth rocking!

@NICOLE - glad you mentioned that because I wanted to be sure it was clear...I just used the egg carton to SHAPE/MOLD my aluminum foil....pressing it in the egg cavities...then I lifted the foil from the egg carton and ONLY USED THE SHAPED FOIL ON THE GRILL and NOT the carton as YES an egg carton would burn on the grill!!!

Wow that looks very nice...I'm gonna stuff mine with jalapeno,minced meat,sour cream and cheese..(I don't like goat cheese)

These stuffed sweet peppers are very tasty, Perfect for appetizers, love it.
