Smashed Potatoes with Fresh Herbs & Goat Cheese
I'm excited! Our local Farmer's Market begins this week. Farmers and fine food purveyors from around the Garden State will gather in our town each Wednesday to showcase their bounty of homegrown crops and handcrafted gourmet delights!
Jersey corn, tomatoes, peppers, zucchini and squash...radishes, carrots, broccoli and potatoes will all share space amongst the booths and booths of fresh produce lining our street!
In preparation...
I decided to make and photograph a simple dish of Smashed Potatoes with Fresh Herbs and Goat Cheese
Rosemary, thyme, basil, oregano, parsley, sage and chives....come together with soft goat cheese and warm roasted potatoes to make a wonderfully fresh side dish perfect with just about anything!
Meant more for inspiration...the simple recipe follows...
Smashed Potatoes with Fresh Herbs and Goat Cheese, serves 2-4
Ingredients:
A few handfuls of baby potatoes
Olive oil
2-3 Tablespoon Fresh Herbs
2-3 Tablespoons Goat Cheese
Kosher salt and fresh cracked pepper to taste
Directions:
Preheat oven to 400.
Take a few handfuls of of baby potatoes, skin left on and coat them in olive oil.
Roast the potatoes in the oven approximately 20-30 minutes or until soft to a fork.
Place hot, roasted potatoes into a large bowl, add your fresh chopped herbs of choice.
Add the goat cheese.
Smash the potatoes with the herbs and cheese with a wooden spoon or masher.
Salt and pepper to taste. Enjoy warm, room temperature or cold.

These sound perfect!!!
First of all, these potatoes are perfect...creamy, cheesy, but full of freshness from the herbs. Yum.
Second, I am so jealous that your market is on Wednesday...I love mine, but it would be so nice to be able to stock up for the weekend ahead of time. I have to wait until Saturday.

I hate mayo so this sounds like the ideal potato salad for me! I'll definitely be trying it for my next bbq!

Delightful! What a lovely idea to add goat cheese, I have done the herbs and such before but I want to try this :)
