Roasted Tomatoes with Fresh Herbs, Garlic and Cheese

Last night, my neighbor Jackie brought us over a version of these Roasted Tomatoes with Fresh Herbs, Garlic and Cheese.

Jackie used large tomatoes and cooked them down on a grill until soft ~ they were like mini pizzas minus the bread ...and super fresh and delicious...

I wanted to recreate the tomatoes exactly...but I was in the possession of a bunch of small ones I needed to use...

so here's my version of Jackie's dish...with huge honkin' pieces of bread!

A simple and wonderful summertime treat!   The basic recipe follows...

Roasted Tomatoes with Fresh Herbs, Garlic and Cheese

A few handful small tomatoes, halved
Olive oil of coating
2+ cloves of garlic, diced
A few handfuls of chopped fresh herbs, shown here: basil, sage, oregano and thyme
Mozzarella Cheese (or cheese of choice) for topping (as much or as little as you like)
Kosher salt and fresh cracked pepper to taste

Directions:

Preheat oven to 425.

Place your tomatoes in an ovenproof casserole dish. Salt and Pepper.

Drizzle with olive oil.

Top with fresh chopped herbs.

Top with cheese.

Drizzle with a touch more olive oil and a few fresh herbs.

Cook in the oven about 8-10 minutes, or until the cheese is melted and crispy on the sides.

Serve with a delicious loaf of fresh, crusty bread.

Yes, PLEASE! Warm tomatoes are one of my favorite foods - and well, cheese just makes everything better! :)
