Angel Hair Pasta with Broccoli, Olive Oil, Garlic Chips, Toasted Pine Nuts and Cheese

There are those garlic chips again!  As far as I'm concerned ...they make everything better!

We're away for the weekend...tonight's dinner is going to be a Sauteed Flounder with Jalapeno Cream Sauce (among other seafood...stay tuned)...but for now I thought I would post yesterday's lunch.

A delicious vegetarian pasta dish with beautiful colors, flavors and textures...

No exact measurements...what follows are the steps involved in preparing the dish...enjoy!

Angel Hair Pasta with Broccoli, Olive Oil, Garlic Chips, Toasted Pine Nuts and Cheese

Prepare your garlic chips:

thinly slice your garlic cloves...as thin as possible

place olive oil in a small to medium pan, add your raw garlic chips

turn on the heat to medium-high and cook your garlic slices until the begin to sizzle and turn a light brown

carefully and quickly remove your garlic chips from the pan and place them on a paper towel to drain, do not discard the oil

Prepare the broccoli:

take the oil that you cooked your garlic chips in and add it to a skillet (add some red pepper flakes to the oil here if you like)

place a bunch of chopped broccoli into the skillet with the oil (add more oil if necessary)...

Saute up the broccoli over medium heat until soft but not mushy (you may have to cover the pan for a bit to create a "steaming" environment for the broccoli to cook) but sure to finish the cooking with the cover removed ...a little "charring" of the broccoli is nice

salt and pepper to taste

Toast your pine nuts:

place desired amount of pine nuts into a pan and toast until lightly browned, careful not to burn

Cook your pasta

cook your favorite pasta, drain but do not rinse

Construct the dish

Place your cooked pasta in the pan with the broccoli, toss with tongs, add more olive oil if desired, salt and pepper to taste. 

Add your pine nuts, garlic chips and top with fresh Parmigiano-Reggiano

Girl, you sure know how to make a simple meal look stunning! Love how much thought you put into every presentation. Take it from someone who is the "if it doesn't look good, I probably won't taste it" type, I would definitely taste everything you make.

Oh, that looks sooooooo good!!! I want a huge plate of that right now. Than again, if you are serving it with sauteed flounder with jalapeno cream sauce I might want to save room!!!
