TWO THINGS:
ONE: I felt like being BOLD with my first photo...it was a relatively clean seed grab (that I was proud of) plus the picture clearly depicts how I'm feeling this week (don't mess with me)
and...
TWO: Make no mistake...THIS IS NOT GUACAMOLE!

In fact...if there is one thing I have learned in my 30 (some+) years on this earth it's that...
...people are VERY specific about their Guacamole ~ myself included!
Some like to add fresh garlic...(I don't)
Some like diced onion...some prefer scallion...(I'll take either)
Some add mayonnaise... (no comment....)
Some like it chunky...others prefer smooth...(chunky...definitely chunky)
Some like it spicy...some bland...(a little heat is good)
Some don't like it at all... (????) (this is only OK if you're allergic which I know some people who are. Just keeping it real)
These photos show a non-mayonnaise based Remoulade ~ replacing the mayo with fresh avocado instead! The recipe can be found here at SimplyRecipes.com
My Notes:
I followed the directions exactly but used Haas Avocados and cilantro instead of parsley.
I also did make the salmon mentioned in the recipe (thought not photographed.) I apologize...our salmon looked close to the picture in the attached link...but
Cook your salmon first...then make your remoulade and serve!
We enjoyed the meal with light and crispy, low-salt, blue corn tortilla chips...and you better believe (below) I licked this bowl and spoon clean! Enjoy!

Avocado is my favorite favorite green veggie ever. Ever! I am so making this soon!! (sans cilantro but whatever LOL) LOVE the 1st shot, nothing is quite as satisfying as a knife blade with an avocado pitt firmly embedded in it :)
I love anything with avocado in it. In fact, I just posted a recipe with a tomatillo salsa that has avocado: http://bit.ly/lANC12 I'm really not sure why anyone would not like avocado, it's simply the best. I'll eat it plain with a little salt, though I prefer guacamole (no mayo added).
Love the idea of a Remoulade versus the guacomole which is probably more chunky.

Oh honey you and I are two peas in a pod. Chunky ALL the way and no comment on the mayo! But as for this remoulade...yes, yes and yes. I hope your week gets better - you've sure made ours with this lovely post!
I agree with you on all counts regarding the guac, and I love that first pic! This sounds like it would be perfect on salmon. Really, anything with this remoulade sounds good!
I like my gaucamole exactly the way you like yours. Surprise surprise, hehe. This looks fabulous. It is a great idea to substitute mayonnaise with avocado, I am already thinking of the possibilities.
Getting a clean avocado seed like that is definitely something to be proud of! Usually, I end up with avocado EVERYWHERE when I try to de-seed it. Nice.

I love it when I get a clean "seed grab". Doesn't happen all the time for me, like it does for Rick Bayless. The remoulade sounds good...I trust you when you say it worked well with salmon.

You are so right on about people being particular w/ their guac! As a kid, I hated it, but LOVE it ( and avocados) now. My dad refuses any and all avocado and guac (his parents grew avocados and he was forced to eat them as a kid), except his own special guac recipe. This version w/ salmon looks delicious. Thanks for sharing!
